Food is central to life. Not just eating but also entertaining and socializing. This is a serious issue for me and my food allergic boys. It probably is for you, too.
I have learned to cope with some efficiency tips that I call Bits-O-Joy. Here’s number 1.
Make gluten-free safe cupcakes a dozen at a time. Use what you need and place the remainder in a freezer bag, label and freeze immediately. When you get a call at 9:00 p.m. on a school night that one of your child’s classmates is celebrating a birthday the next morning at school you will be ready for it. Pull out a cupcake, frost it with safe frosting and sprinkles and stick it in the backpack. I also do this with cookies, brownies and doughnuts so I can match whatever is being brought into school.
