Gluten-Free Shamrock Cookies for St. Patrick’s Day

Gluten-Free, Dairy-Free Shamrock CookiesI married a man with Irish roots and we love St. Patrick’s Day!  We celebrate with a big feast every year.  We serve lamb stew, irish soda bread and a rainbow of colorful fruit along with Guiness and Bailey’s (more on the feast in my next post).  It is always a good time.  But, my kids prefer shamrock cookies over the actual meal and baking gluten-free, dairy-free cutout sugar cookies can be challenging.  This year, I have found a recipe from Jean Duane, Alternative Cook based here in Colorado that I love.  These cookies hold great shapes, taste good and don’t crumble.  They even travel well in school lunch boxes.  Below is the recipe.  Let me know if you try it.  Enjoy!

Sugar Cookie Recipe adapted from Jean Duane

Wet Ingredients:

1/2 cup sunflower oil

1 cup organic cane sugar

2 tsp. gluten-free vanilla

3 egg whites

1/3 cup rice milk

Dry Ingredients:

1 1/4 cup sorghum flour

1 1/4 cup brown rice flour

1/2 cup sweet rice flour

1 tsp. cream of tartar

1 tsp. baking soda

1 tsp. baking powder

2 tsp. xanthan gum

1/2 tsp. salt


1.  Preheat oven to 350 degrees.

2.  In a stand mixer, combine wet ingredients.  In a separate bowl, whisk together and add wet ingredients.  Mix until incorporated.

3.  Refrigerate dough for 2 hours.  Roll dough about 1/2 inch thick on oiled baking surface.  Cut out cookies with cookie cutters on baking sheet covered with parchment paper.  Remove the dough around the cutouts.  Bake 10-12 minutes and ice when cooled.
